The closest I came to an American pancake growing up, was a ‘drop scone’ slathered in margarine, made by my Gran.
This style of pancake is the childrens’ favourite when we stay in a hotel but sometimes, you just need to make them from scratch.
You will need:
135g plain flour
1 tsp baking powder
½ tsp salt
2 tbsp caster sugar
130ml milk
1 large egg
2 tbsp melted butter and more for cooking
Sift the dry ingredients into a large bowl.
Whisk the wet ingredients.
Mix the wet and dry ingredients together. Leave to stand for a few minutes.
Heat a non-stick pan on a medium heat, add a knob of butter. When melted, add a ladle of batter.
Cook for 2-3 minutes, flip over and cook for another 1-2 minutes until golden brown.
You can keep your pancakes warm, but from experience with the drop scones they can become a bit bouncy so eat them immediately.
Serve with topping of your choice, I don’t think you can beat lemon and Golden Syrup.
